Hey yall. Welcome back to the fourth week of our Southern cookin experience. This week, I managed to get to the main course, the Southern supper. We began early in the day, getting our roast seasoned up with garlic power, salt, pepper, and good ole Greek seasoning. Make sure to sear the sides of the brisket. We then cut up some onions, and placed the roast into the crock pot, put the onions over, and put half a stick of butter into the crock pot. You gotta make sure to let that cook for at least 6 hours. At around the 5 hour mark, we started our sides. We made mashed potatoes, fried okra, black eyed peas, and cornbread. We breaded our okra with some cornmeal, and made the mashed potatoes from scratch. We just boiled the peas with water and some bacon. After we fished out our brisket, we used the leftover juices to make a gravy for the mashed potatoes. It was a delicious supper.

Southern Cookin' 1.3
Welcome back yall, to week three of Southern Cookin'. This week was rather slow, since my mama had to work. So, I attempted to make the buttermilk biscuits on my own. I followed most of the same steps from the first time I made them with my mama. However, I added a little extra melted love (aka melted butter) to my flour mixture. This might have been a mistake, because my biscuits did not rise nearly as much as they were supposed to. I'm not sure if the extra butter was where I went wrong or if I maybe measured incorrectly, but I am planning to give it another go. See yall later.

Southern Cookin' 1.2
Welcome back ya'll. Southern Cookin' has made some great leaps. My mama and I had to compare schedules, so we jumped straight ahead to the dinner portion of our Southern menu. We made southern fried chicken, five cheese mac and cheese, and smothered green beans. My mama got a cut up whole chicken, she recommends a smaller chicken to make it easier to cook. The chicken spent around three hours marinating in a buttermilk, spice, and Tabasco mixture. We prepared a breading of flour and our personal spices, and covered the chicken thoroughly. We already had a dutch oven full of hot crisco prepped so we went ahead and dropped the chicken in.
Next up, we got moved on to our mac and cheese. We first got a pot and placed some butter in there. As the butter melted, we added in flour and mixed it well. Next, our milk was stirred in and then some chicken broth. We let it simmer for a few minutes. We then put in our cheeses of choice, and stirred them in letting them melt to make a cheese sauce. Our pasta was already cooked so we added it to the cheese sauce, and we put the whole thing into a glass pan. We added the rest of our cheese on top and put it in the oven.
Finally, we started on our smothered green beans. After we got our green beans in a glass pan, we put a heaping helping of brown sugar and bacon bits on top, and placed it in the oven. Our chicken had been frying the whole time, with us occasionally taking the top off the pot to move the chicken around to ensure even cooking. After everything was said and done, our chicken was not as crispy and we would have preferred, but thats an easily fixable problem. Thanks for reading, and be sure to come back around ya'll.
